Duck & Waffle intros flavour-focused cocktails

Leading London bar Duck & Waffle has introduced a new drinks menu, featuring flavour-focused serves from Rich Woods’s new cocktail book, The Cocktail Guy.

The new cocktail list features the Martini-style Acorn Aperitivo

Woods, who is head of spirit and cocktail development at Duck & Waffle, has unveiled a series of flavour-focused serves from his new book.
The new drinks list follows the launch of Origins, which focused on highlighting every flavour note in each individual ingredient. The menu stemmed from the bar’s previous Urban Foraging vs. Urban Decay menu.

His new book The Cocktail Guy is split into three chapters, the first is inspired by the garden and the outdoors, the second is from the kitchen, and the third, which is “more geared towards the professional”, is iconoclastic and will focus on “classics but with a new approach”.

Speaking to The Spirits Business in August, Woods said: “Its really about how I approach drink, how I look at flavour and also, demystifying what people believe is a farfetched approach. And a lot of what I do, everyone assumes it’s all smoke and mirrors, and very complex. When actually what I’ve actually tried to do with this is say it’s really quite simple.”

Roasted Red Pepper & Blood Orange Bellini

Described as sweet, earthy and fresh, this serve combines Roasted red pepper, blood orange, and prosecco.

Eden

This bright, floral and hoppy Martini contains Bombay Sapphire gin, Martini and Rosso Bianco vermouth, St Germain, IPA reduction, and beetroot paint.

Ristretto Negroni

Slow dripped through roasted coffee over 24 hours, the Ristretto Negroni blends Bombay Sapphire gin, Campari, Aperol, and vermouth blend over a block of ice.

Pink Peppercorn Lemonade

Served long, citrusy and fresh, this serve combines din, clarified grapefruit, lemon, pink peppercorn, elderflower, and soda.

Acorn Aperitivo

This Martini-style drink combines Grey Goose vodka, Cocchi Rosa, and acorn liqueur.

Marigold Affinity

Served spritz-style, the cocktail comines marigold-infused Russian Standard Platinum vodka, St Germain, grapefruit, marigold petals, and prosecco.
