Finland-based Kyrö Distillery has expanded its on-trade programme, Kyrö Academy, inviting bartenders to develop a bottle of limited release potable bitters with Finnish botanicals.

The distillery is looking for an international group of six to eight bartenders, chefs, botanists or other skilled professionals to take part in the unpaid project, released under Kyrö’s Study series, an experimental “playground” for new spirits.
The only guidelines for the base spirit is that it must be 100% wholegrain rye and the leading botanicals must be from Finland.
According to the brand, rye is the “most Finnish” of grains and gives a hint of “spiciness” when added to spirits.
Kyrö Academy began in 2015 as a year-long bartender programme aimed at training and selecting a brand ambassador to join Kyrö’s ranks. Now its focus is on new spirit development with bartenders, creating products for bartenders.
Applicants have until 24 February to apply by emailing academy@kyrodistillery.com and explaining your vision on what kind of potable bitter is missing from the world and why you should be developing it. Appropriate skills can be related to cocktails, botanicals, history, serving or drink concepts.
