ELLC and Sonoma team up for wheat whisky

East London Liquor Company will make its first wheat whisky with the help of Sonoma County Distilling CoThe wheat whisky will be produced at ELLC’s distillery in Bow Wharf on Thursday 6 October in a double distillation using 65% British wheat (half malted and half unmalted), 30% heirloom barley malt and 5% unmalted corn.
It will then be aged in ex-Sonoma Rye barrels for an unspecified period of time.
ELLC’s Andy Mooney and Sonoma County Distilling Co’s Adam Spiegel will team up to create the whisky – ELLC’s first wheat variety.
“We are always up for doing something a little different, and we haven’t yet had the chance to put our spin on a wheat whisky,” said Mooney.
“I thought this would be the perfect opportunity to do our very own wheat, especially as we could get help and advice from Adam, who’s had lots of experience developing his own wheat whisky, while still making it unique to us.”
Guests are invited to attend the distillation at Bow Wharf from 10-11am. Tickets are also on sale for fans to attend a meal on Wednesday 5 October celebrating the partnership.
ELLC filled its first casks of London Rye last year, ageing the whisky on-site in the distillery’s cellar.
