Distillery launches Cornish Clotted Cream Gin
The Wrecking Coast Distillery in Cornwall has launched its inaugural product – a gin distilled with Cornish clotted cream.
Cornish Clotted Cream Gin is made with fresh Cornish clotted cream and 12 hand-selected botanicals
Cornish Clotted Cream Gin, bottled at 44% abv, is made with fresh Cornish clotted cream, 12 hand-selected botanicals and Cornish spring water.
It is created using a hand-blown glass vacuum still, the iStill, which distills neutral spirit and fresh clotted cream, resulting in a clear gin that “retains the flavour of the cream together with the velvety richness of the texture”.
“Our idea was to construct a gin around the Clotted Cream to enable the distinctly luxurious feel in our gin,” said Avian Sandercock, master distiller at The Wrecking Coast Distillery.
“It was essential that we captured the velvety richness of the clotted cream, but this caused us a few challenges. In the production of Clotted Cream, the cream is baked giving the iconic golden crust and smooth, firm cream beneath. But when heated the cream will separate and the flavours become more caramel than cream.”
He continued : “We wanted to be able to put all our efforts into constructing a new gin around the Clotted Cream and not into coaxing old technology to life. We kept coming back to iStill, a Dutch company run by Odin, the genius behind their computer-controlled stills.”
To create the body of the gin, Wrecking Coast rests 12 botanicals in grain spirit for 14 days, after when the liquid is run through the iStill and left to rest for a further seven days.
Separately, Cornish clotted cream and neutral spirit are then run through the vacuum still at room temperature. This cream spirit is then mixed with the botanical spirit and diluted with Cornish spring water.
Local Cornish artist John Blight produced a bespoke piece of art for the label on Cornish Clotted Cream Gin’s bottle. The gin carries an RRP of £37.50 per 70cl bottle, or £24.00 per 35cl bottle.
