Edinburgh Gin opens new Leith distillery

The Spencerfield Spirit Company has opened a second distillery for its Edinburgh Gin brand in Leith, allowing the gin to quadruple production capacity.

The Edinburgh Gin Distillery is situated in a disused space that formerly housed a biscuit factory in Leith – a district in north Edinburgh.

Edinburgh Gin is also made at the Heads and Tales gin emporium, situated below The Rutland Hotel in Edinburgh.

The new distillery will produce Edinburgh Gin’s core range, including: Original, Cannonball and the recently released Seaside Gin, which joins the brand’s permanent portfolio for the first time.

Production will continue to be led by David Wilkinson as part of the brand’s long-standing partnership with Heriot-Watt University’s MSc in Brewing & Distilling course.

“Leith is steeped in history as an iconic gin port and was the centre of a home grown spirits industry,” said Alex Nicol, co-fonder of Edinburgh Gin. “It made perfect sense to carry on that tradition since Melrose Drover closed its doors in Edinburgh over 30 years ago, and ensure the legacy lives on.

“Leith is undoubtedly experiencing its own kind of renaissance, as is gin. We have transformed part of the former United Biscuit’s factory into our second distillery, in response to the international spirit revival.”

Nicol added that the new site will allow Edinburgh Gin to quadruple production, producing enough spirit to make more than £2.5m Gin and Tonics a year. There is also scope to add another still at the distillery, Nicol said.

“It’s an exciting time for Edinburgh Gin, as we continue to craft the modern-day gin renaissance from Scotland’s capital,” he added. “With the science and art of distilling at our core, we are energised that the spirit of Leith lives on at our new Biscuit Factory Distillery.”

Edinburgh Gin has signed new distribution deals in Europe, Scandinavia and North America for its core range, and recently signed a contract with Asda Scotland.
