Bar spans ‘200 years of spirits’ in one menu

London bar Mr Fogg’s Residence has announced a “first of its kind” Vintage Cocktail Menu, spanning two centuries of spirits.

Francesco Medici, bar manager at the Mayfair venue, created the menu with his team, “resurrecting” a number of vintage spirits in the process.

The bar is based on the home of Jules Verne’s famous adventurer, and from January, the Vintage Cocktail Menu will “pay homage” to the Victorian era onwards.

Cocktails featured in the menu include the Vintage Brandy Crusta, invented in New Orleans in 1852. The serve combines Hine Cognac (1960), Bols Dry Curaçao (1940), fresh lemon juice, caster sugar and Angostura bitters. It is thought the recipe first appeared in print in The Bar-tender’s Guide, published in 1862.

The Vintage Ramos Fizz, invented by Henry C. Ramos in 1888, is also included. A “frothy” tipple, the cocktail is made with Beefeater gin (1970), Cointreau (1950), homemade sugar syrup, fresh lemon and lime juice, egg white and double cream, topped up with soda water from a vintage Cointreau syphon.

Inspired by the California Gold Rush in 1849, the Vintage Martinez is made with Beefeater gin (1970), Francesco Cinzano Antica Formula vermouth (1960), Luxardo Maraschino liqueur (1950s) and orange bitters.

Also on the menu is the Vintage Negroni, a real classic. At Mr Fogg’s Residence it is made with Sarti Dry gin (1950s), Martini & Rossi vermouth (1950s), and Campari Bitters. The serve is thought to date back to 1919 Florence, Italy.

The Vintage Hemingway serve dates back to the 1930s

The Vintage Blood & Sand serve is made with Auchentoshan Black Lab Scotch Whiskey (1970), Martini & Rossi Vermouth (1950s), Cherry Branca liqueur (1960s), topped with fresh orange juice. It was first published in the Savoy Cocktail Book in 1930 and was inspired by Rudolph Valentino’s 1922 bullfighter movie, Blood and Sand.

Rounding off the menu, the Vintage Hemingway is made with Bacardi Blanca (1970s), Luxardo Maraschino (1950s), fresh lime and grapefruit juice. It was created by Costantino Ribalaigua Vert, the head bartender of La Floridita in Havana, Cuba, for Ernest Hemingway in the 1930s.

The Vintage Cocktail Menu will be served at Mr Fogg’s Residence from January 2016.

Mr Fogg’s opened a second venue in Covent Garden in October 2015. With a focus on ‘mothers’ ruin’ cocktails, Mr Fogg’s Tavern features a dedicated Gin Parlour and Salon above the main bar.
