Producer releases chipotle pepper whiskey
By Annie HayesRogue Ales and Spirits has launched Rogue Chipotle Whiskey, a new small-batch expression distilled with chipotle peppers.
Chipotle peppers are used in four stages of production: brew kettle, still, barrel, and bottleThe Oregon-based distillery grows the jalapeños used in the distillation at a two-acre farm, allowing them additional time ripening on the vine to boost their capsaicin levels – making a spicier pepper.
Once harvested by hand, the jalapeños are driven to the Rogue Brewery in Newport, Oregon, where they are dried and smoked over cherry and alder woods.
The smoky chipotles are then used by Brewmaster John Maier to brew the Rogue Chipotle Whiskey wash.
Once the brewing is complete, the chipotle wash is driven to the Rogue Distillery, where more freshly smoked chipotles are added during the distillation process.
After distillation is complete, Rogue Chipotle Whiskey is aged in Oregon oak barrels along with a final addition of chipotles and bottled at 40% abv.
On the website, the distillery states: “Rogue Farms Chipotle Whiskey is distilled from the Platinum-medal winning Chipotle Ale. Chipotle Ale is brewed with rich malts, multiple hops and delicately spiced with chipotle peppers.
“The ale is then distilled in a copper pot still and barrel aged with chipotle peppers to create a whiskey with bold chipotle flavors.
“This whiskey is packed with multiple layers of smokey spicy chipotle flavor from the four additions of chipotle peppers; brew kettle, still, barrel, and bottle.”
Rogue Chipotle Whiskey will be available at select retailers throughout the US in 750ml bottles.
