Ki No Bi partners with Sexy Fish

Japanese gin brand Ki No Bi has teamed up with London restaurant Sexy Fish to create a limited edition bottling.

The bespoke gin, created exclusively for the Mayfair restaurant and bar, has been created using a blend of the six elements of Ki No Bi with the addition of almond, which is used as a supplementary single botanical distillate.

Xavier Landais, director of bars, Caprice Holdings, commented: “When we decided we wanted a bespoke gin, no other distillery sprung to mind other than Ki No Bi.

“Our Japanese ties, topped with the incredible skills that makes Ki No Bi what it is, made this partnership obvious.

“We are honoured to be the first venue to have a bespoke gin from Ki No Bi – our Sexy Fish Martinis will never be the same.”

Ki No Bi is a small-batch, artisanal gin created at Japan’s first dedicated gin distillery, which was built in Kyoto in 2016.

It is made from a high-quality rice spirit and 11 Japanese botanicals including yuzu, lemon, sansho pepper, ginger and gyokuro tea.

Ki No Bi translates to mean ‘beauty of the seasons’, as each of its botanicals are sourced in season.

The botanicals are divided into six elements: base, citrus, tea, herbal, spice and fruity or floral, each of which is distilled individually.

Furthermore, the post distillation maceration of the gin incorporates four varieties of Japanese citrus fruit, including daidai and navel orange.

Daidai is a symbol longevity in Japan as it can be found on trees all year round.

The tailored gin, bottled at 47% ABV, is said to make ‘an exceptional Martini’, but is also recommended served in a Gin & Tonic or a Negroni.

The limited edition gin is available to order at Sexy Fish London’s bar from today (13 February) for RRP £16 (US$19.27) per 50ml serve, while stocks last.
