Lind & Lime opens energy efficient distillery

Edinburgh-based gin brand Lind & Lime has opened the doors to its new energy efficient distillery in the Port of Leith.

The brand is named after Dr James Lind, who developed the theory that citrus fruits could prevent scurvy

The new industrial headquarters of the producer’s benchmark London dry gin will expand bottling capacity to upwards of one million bottles per annum, and will offer tours and tasting experiences for up to 10,000 visitors a year.

Ian Stirling, who co-founded Lind & Lime with Paddy Fletcher in 2014, said: “Lind & Lime’s journey began in a small industrial unit on Tower Street in 2018 with the sole aim of creating a benchmark classic style of gin.

“Since launching, our feet have barely touched the ground and we have struggled to meet demand. We now export to 24 international markets and we are incredibly excited to be expanding distribution to the USA later this year.

“We’d been searching for a larger facility for some time, and we were incredibly fortunate to secure the former Sports Warehouse on Coburg Street. Keeping production and bottling in Leith was incredibly important to us.

“Following a £600,000 fit-out, which began in October 2021, we’ve invested carefully to make this building as environmentally efficient as possible, and we will continue to power production with 100% green electricity.”

Lind & Lime Gin is produced with 100% organic ingredients and is packaged with 100% plastic-free materials.

Tamsin Job, visitor experience manager, added: “Over the years we’ve seen the resurrection of Leith to a bustling neighbourhood and foodie hotspot. Lind & Lime’s new distillery and visitor experience is just a stone throw away from the Shore of Leith, home of the likes of Fingal, The Granary and Martin Wishart Restaurant.

“Our tour begins with a welcome Lind & Lime gin and tonic, as we start sharing stories of Dr James Lind, known for his pioneering work investigating a cure for scurvy. We’ll chat about our blend of organic botanicals and then run through the gin distillation process while sharing the stories of how we perfected our recipe.

“Guests are able to try their hand at bottling their own Lind & Lime miniature and then shake up the perfect Gimlet.”

The 90-minute tours will run weekly from Thursday to Saturday. Tickets are priced at £25 (US$31.54) per adult.

Stirling and Fletcher are also behind the forthcoming £12 million Port Of Leith whisky distillery.

At the purpose-built vertical distillery, they are undertaking a new approach to Scotch whisky which the pair are calling ‘new Scotch’. They hope the Port of Leith Distillery will become another landmark visitor attraction for Edinburgh on its completion in late 2022.
