Skybar launches in Paris

An open-air rooftop bar is opening in Paris, France, and is said to be the highest of its kind in the capital city.

The bar will open its doors in January

Skybar is a nightlife complex set up by lifestyle hospitality company Ennismore. The chain already has branches open in Miami and Los Angeles in the US, Doha in Qatar, and in the Bahamas.

The venue, located on the 32nd floor of hotel Pullman Paris Montparnasse, will open its doors in January.

Chadi Farhat, brand chief operations officer and head of Middle East and Asia Pacific of Ennismore, commented: “Skybar Paris will mark our fifth location of this iconic nightlife brand which continues to expand globally.

“As our first Skybar venue in Europe, we are excited to bring a fresh concept to some of the world’s most discerning guests with a worldly approach to mixology and programming.”

Skybar will boast a cocktail bar and VIP corner, with guests able to access the venue by elevator. The space presents a panoramic view of the city, including the Eiffel Tower.

Bar manager Guillaume Guerbois has created a menu comprising eight signature cocktails for the Paris outpost, and the new drinks list is divided into four categories based on texture: Sparkling, Silky, Airy and Tart.

Signature serves such as the Grilled Corn, which blends Caleño spiced peanut butter fat wash, sweetcorn syrup, fenugreek seeds and yellow curry leaves, will be available. Also featured on the menu is the cocktail Aeroplane, made up of coconut-infused pisco, crème de violette, maraschino liqueur, tart cherry juice, coconut water and orange-scented aquafaba.

A list of spirits, wines and beers, plus non-alcoholic beverages, will also be served.

Drinks are paired with nibbles that have been created with an Asian twist, such as Wagyu beef tataki with black truffle or foie gras with umeboshi chutney.

Ennismore also owns Perthshire-based Gleneagles hotel, which recently partnered with The Glenturret Distillery.
