Bimber Distillery debuts inaugural single malt whisky

London-based Bimber Distillery will release its inaugural single malt whisky, called The First, next month.

The First whisky is aged in a combination of five Sherry casks

Available from 13 September, The First whisky has been aged in Pedro Ximénez Sherry casks, which were laid down in 2016 – Bimber’s first year of production.

The five Sherry casks used to mature the single malt were all previously used in a Jerez solera for several decades, while most other distilleries use standard seasoned casks, according to Bimber.

The whisky is made from Bimber’s single farm barley, malted at Warminster Maltings and fermented for seven days in American oak washbacks.

Bottled at 54.2% abv, the “elegant and layered” expression is said to reflect the “light, accessible and fruit-forward DNA of the distillery’s spirit”.

“It’s an extremely proud day for Bimber to be finally able to share our single malt whisky with the world,” said founder and master distiller Darius Plazewski.

“We’re delighted that The First is not only an enchanting single malt, but that it also stands true to the style and character of the whisky that we’re committed to producing.

“There’s been an incredible amount of hard work put in behind the scenes and I want to raise a glass in thanks to both my team and the many enthusiasts who have supported us during our first three years.”

The First is limited to 1,000 bottles (800 for the UK) with an RRP of £120 (US$145.33). It is available exclusively from Speciality Drinks in the UK.

Bimber is also launching a competition on social media, asking fans to share a photo or video of their numbered release with the cork removed.

Those who take part will be entered into a draw to win one of 10 pairs of tickets for a “one-of-a-kind” Director’s Single Cask tasting with Plazewski at the distillery in northwest London.

Winners will receive the first opportunity to sample Bimber’s second bottling – a recharred American oak whisky due for release in October 2019 with an RRP of £65 (US$78.72).
