Sexy Fish bar ups sustainability focus

London restaurant bar Sexy Fish is embracing the zero-waste movement with its new cocktail list, which does not contain any perishable ingredients.

The ‘Cocktails to Whet Your Senses’ menu launched last week. It was unveiled in three cocktail capitals – London, Singapore and New York – over the course of one day.

The Sexy Fish team took over 28 Hong Street, in Singapore, and Mace, in New York, for the international launch.

According to Sexy Fish, the menu marks a “new era” for the bar due to its “renewed focus” on sustainability. Developed over the course of 10 months, the drinks replace citrus, herbs and garnishes with homemade tinctures, distillates, cordials, syrups and shrubs.

The menu of 21 drinks also aims to “introduce an element of democratisation” by listing the ingredients and method for each cocktail, so guests can recreate them at home. The ‘Cocktails to Whet Your Senses’ cocktail book is available to purchase for £15.

Each piece of glassware Sexy Fish uses to serve the cocktails will be available to purchase from the venue.

Xavier Landais, director of bars for Caprice Holdings, said: “This menu took the best part of 10 months to create, and the result is truly remarkable, something I’m very proud of.

“When we started development, the team and I wanted to create a cocktail menu which would suit our guests and fit our venue, whilst also bringing the bar at Sexy Fish on par with standalone cocktail bars.

“Our brief included three pointers: be as sustainable as possible, surprise our guests and create delicious cocktails. I am thrilled with the results of what is the most accomplished cocktail menu to date within the Caprice Holdings estate.”
