Chetiyawardana to open botany-inspired bar

World-famous bartender Ryan Chetiyawardana is set to open a botany-inspired bar at new boutique London hotel Mondrian this summer.

Chetiyawardana, otherwise known as “Mr Lyan”, alumni of 69 Colebrook Row and founder of London bar White Lyan, will open Dandelyan – a bar which “re-imagines” classic drinks with fruits, vegetables and fresh herbs.

Visitors to Dandelyan will have the opportunity to browse Chetiyawardana’s “field guides” which aim to educated them about spirit experimentation and “flavour amalgamation”.

“Inspired by modern botany, the team draws from their years behind the bar, and in labs and kitchens, to concoct drinks that ignite the imagination and excite the palate,” representatives at the Mondrian hotel claim.

The bar is clearly a very different venture to Chetiyawardana’s White Lyan, which does not use any ice or perishables and uses very few branded spirits.

Mondrian London hotel, the first in the chain to be opened outside the US, will also include a restaurant headed up by New York chef Seamus Mullen.
